Usually the car gets separated from the engine on these cars instead of the engine being separated from the car. What I mean is that there are 6 bolts holding the subframe on and you can lift the car up and the engine will stay on the subframe as the car is lifted off. If you don’t have a lift, I can’t help you. Sorry.
As for the exhaust question, hopefully you’ve unbolted the manifolds from the block, but if you want to take them with the engine, there are clamps in your picture that you loosen and then either slide them lose with one still on the factory cat and the other on the catback, or take a slotted screwdriver and pull the tab enough that both clamps can be left on the factory catback. If all you want are the manifolds and not the catalytic converters, there are two bolts that can be accessed from the engine bay with an extension bar to unbolt the cats from the manifolds.

I lifted mine out from the top. Take your front bumper off. I tried doing it with the bumper on and realized I needed the lift 2 inches closer that I couldn't get with the bumper on because of its pointy nose.
Also, be very careful using only the valley cover bolts to lift it out. I pulled a poorly tightened valley cover bolt straight out due to the weight of the engine and the thickness of the metal L brackets on the ends of the chains not allowing allow the valley cover bolt to thread in far enough. Luckily the threads weren't chewed up too bad once it was fully threaded in without the lift connector. For better angle and leverage I wound up attaching the front chains to a couple of studs /bolts on the face of the heads. You have 3 bolt holes per head/per side to choose from in the front. I still used the valley cover bolts for the rear 2 chains. I used a load leveler that has 4 chains/attach points. I suggest a hand cranking load leveler because you will need to play around with the angles to lift it cleanly on both ends and to avoid hitting the cowl area. This was my biggest obstacle on the removal. The leveler will allow you to shift the engine forward a bit to avoid the cowl. The most important advice I can give you is to not do this alone. Have 1-2 extra people to help guide the engine during the lift process. The higher you lift the engine, the less control you have of it swinging into things. I am sure someone else that has removed their engine several times has a better way to do this and will hopefully give input. I wish I could have done it from the bottom, but I just don't have the setup and equipment needed for that. Edit: Just noticed in your picture that the hoist has a load leveler, so that is a positive. I couldn't imagine trying to do this without one.

Yep. I learned that the hard way. I was like 3 inches from being able to get it out but the bumper was preventing it from getting closer. Luckily it is fairly easy to reinstall as long as you have someone helping you.

Last time I took the motor out through the top I didn't even remove the radiator. Once it's up a little just turn it sideways next time and use the engine leveler
