But you watch the episode where they beat the headers to a pulp and there's very little change.....

Why no change when reduced at the header but power drop when reduced at the cat-back?

Nothing is reduced in the header. It is still the same size. A dent is just changing the bend / airflow slightly. Power is reduced based on catback size because it affects the speed the air can exit. You need to be able to exit gases in the exhaust as quick as you are taking in air in the intake. If not then you reduce power as seen in the video.
