duh! I can't believe I forgot you can do it this way. I've freaking done many fish frys this way.

I honestly say pass on the fries. bringing the tank/oil/pot/ect is all cumbersome especially since most of us if not all will be in our camaros

Roasted potatoes can take a long time. I believe last time I did roasted red New potatoes it was 30 minutes at 400 degrees.
The propane would be better, less prep work. But figure 3oz per person = a little over 10 pounds of fries needed, if my count of attendees is correct. And that would just be for lunch.
