i have been told from dealer that i will not get the (Carbon Fiber Interior Trim and Instrument Panel) option,

my car Z51 2LT ..

It's not standard, it's optional.

I was told by my dealer that it will be at least 1 month if I want the carbon fiber dash. If I delete this, they will place the order.

If it were me, I would wait if you really want the CF dash. Waiting a month to get the car is better, IMO, than being bothered by not having an option for the entire time you own it. Anytime I have "settled" for something I have always eventually really regretted it.
