A Grilled Cheese Bison Burger! Yup, there are 2 grilled cheese sanwiches being used for the bun here with Bison meat in the middle. YUMMY!!!

Tried grilling something different the other day... as crazy as it sounds, I've been getting kind of tired of the same ol' usual burgers, steaks, dogs, and yardbird.
Took a tortilla (mdium sized: The large ones would be too hard to maneuver), put a bunch of grated jack cheese in it (yep, starting to look like a quesadilla...). Then, short- order cook style, I added whatever ingredients each person wanted, offering diced (pre-sauteed) bell pepper/ onion/ mushroom mix, diced green chilies, diced tomatoes, chopped green onions, and pieces of sausage. Added the desired ingredients, then folded the tortilla in half (much easier to maneuver on the grill than a full- diameter double- tortilla). Put it on the upper deck for a minute or two on each side, then dropped it to the lower deck, where 10- 15 seconds per side gave it a very lightly crisped outer crust with grill marks... Holy smokes... now the wife and kids want it again. Fortunately, so do I. These things are freakin' delicious. I recommend using a pair of tongs and a large spatula together in order to lift/ turn the things. Took a couple of practice tries before I was able to successfully NOT drop half of the stuff through the grate. |
