What would we do without responsibility? ENJOY OURSELVES TREMENDOUSLY! Hahaha! I'm just kidding. I know what you're saying and I, too, need to work to keep me sane. I've often though that I'd love to be a stay at home Mom. But you know what?!? I think that job is harder than the job I travel to everyday! So maybe I'll just stick with working til time to retire. (Or something like that.)

We have to pay those bills so its a must! lol
But I'm hoping to get some good pics tomorrow of the Vette and Camaro, washed and vaccumed it to perfection so I'm hoping for a good day, we work hard so why not enjoy our prizes!

I beat a guy in a Mustang today at the drag strip. I think I wounded his fragile ego. LOL Actually, he beat me once & I beat him once. Several of us had been gathering to chat between races, but after I beat him, he didn't return to chat anymore. Here is a link to the thread about it with pics & video:

I love the looks on some guys faces when you beat them at the track. I think I remember reading that women actually have a better reaction time compared to men, so I love heads-up racing.

It's my Friday! I hope everyone enjoyed their weekend, I'm spending mine getting everything ready for Thanksgiving. Anyone got any favorite family recipe's to share? My specialty is habanero cranberry sauce. I just follow the recipe on the cranberry bag and then add in nutmeg and habanero powder to taste. It is awesome if you like spicy/sweet with your bird!
To make the habanero powder I dice several habanero peppers very finely (wearing rubber gloves), set the oven on low and dry those babies out. Then I grind them up in an old coffee grinder til they are a powder. It does not take much of this powder to really heat things up!

I'm shopping and starting the prep today. Adding some heat to cranberry sauce sounds good, but my family would probably not like it. For my cranberry sauce, I add chopped up satsuma oranges and walnuts.
I also love making my apple-cranberry pie. Just take your favorite apple pie recipe, and add a big handful of fresh cranberries to the filling - it's really yummy!!!

Since you asked, here is a Sweet Potato Casserole Recipe from the wife of a guy I worked with over 20 years ago. They brought it to a holiday pot luck and I've been hooked ever since.

This recipe can easily double as a filling for Sweet Potato pie. Enjoy!


Sweet Potato Casserole

From the Kitchen of the Wife of Bill R., a former co-worker

3 c mashed sweet potatoes (these are just as good if you use canned or freshly cooked)
1 c white sugar
2 eggs, beaten
1/3 c milk
1 can of coconut (can be omitted)
¾ stick butter or margarine
1 tsp vanilla extract


Streusel Topping:
1 c packed brown sugar
½ c all purpose flour
1 stick of butter or margarine, hard (freeze if necessary)

1 c raw, shelled pecans

Heat oven to 350


Drain the sweet potatos and discard the liquid.

In a large bowl, mash the sweet potatoes and add sugar, beaten eggs, milk, coconut, butter and vanilla. Beat by hand or with a mixer until thoroughly blended. Small lumps are OK.

Set aside.

In a separate bowl, using a pastry cutter or table knives, “cut” the brown sugar, flour and butter together until it resembles a coarse meal.


Pour the Sweet Potato mixture in a baking dish*. Sprinkle the Streusel topping over the dish and top with pecans.

In the oven, place a baking sheet under the dish as it easily bubbles over. Bake in a 350 oven for 40-45 minutes.

* Optionally, load the filling (and top with the streusel topping and pecans) into pie shells for Sweet Potato Pie, a great departure from the usual store-bought Pumpkin Pie. Adjust baking time until a knife inserted in the middle of the pie comes out clean. Best served warm.


Now it's Thanksgiving.
