ya know... that cocktail isn't such a bad idea. Except I don't know if there's any booze around here...lol I think the last time I made a pie I used the last of the vodka I had...

No, a little bit of Vodka in the ice water makes the crust flakier. The alcohol bakes off, same as when you flambe with brandy. Vodka has no taste so the crust isn't boozy.

LOL... big difference in the kitchen pecking order between "Baker" and "Chef" sweetie. I wasn't a Chef. I made the pies, cakes, bread, cookies, muffins, etc., for a restaurant. Everything was homemade from scratch... none of that pre-made frozen crap restaurants use now.

Go 50/50 or 1/3 butter and 2/3 lard (both cut into pieces and freeze for 15-20 minutes before using). Then cut in (or process) the Butter first just a little, then the lard. They have different melting points and different purpose to the crust. Oh, and chill the dough disk for half hour before rolling it out.. gives the flour a chance to absorb the liquid and makes it easier to roll out. Chill again for 10 minutes in the pie tin before you fill and bake... the crust will shrink less.
