Hey everyone...GUESS WHO IS BAAAAAAAAAAAACCCCCCCKKKKKKKKK!!!!!!???????!!!!!!!

So good to be H O M E!!!!

Had a BLAST cooking Thanksgiving dinner!! Boy did I miss my kitchen!!!

Now, I need to get rid of the junk and cook only healthy stuff till Christmas!! LoL!

WAHOO!!!

Glad you are home! We cooked our Thanksgiving and it was very healthy but I'm pretty sure I ate about 5 tons worth of food.

We had our second thanksgiving at my mom and dad's yesterday! And yes I ate like a mad woman! LOL hit the gym this evening right when I got home, and gonna keep the meals super clean all week and workout hard!

oh boy did i fall of the wagon over thanksgiving! i ate so much it isnt even funny. time to get back in the right mind set, and get back in the gym!

Welp, this week is my first week back to work. Everyone keeps telling me I need to go eat some pork chops!! They think I got too skinny!!! It's probably cuz my current uniform just hangs off of me!! Need to go get some smaller ones and maybe I won't look like such a bag of bones!

So....with January right around the corner, anyone thinking of a 2012 fitness related resolution? I have decided I want to TRY to run at LEAST a half marathon every month with the US Marine Corps Full Marathon on the docket in October! I already have Jan - Mar lined up! Baton Rouge in Jan, Orlando in Feb, and Dallas in Mar! After that....well then my schedule gets a little more hairy!! But we will see if I will be able to fit one in each month...I gotta make sure I give myself enough recovery time in between so it could get difficult to finesse. Even if I don't hit my goal of one a month, it will still take me toward one of my bucket list items which is to run a half or full marathon in each of the 50 states. I already have Delaware, Ohio, New Jersey and Oklahoma checked off the list!

Well there's nothing better than needing to gain weight this time of year! and those are some awesome goals girl!!!! I hope they all come true! Make sure you keep me (all of us) informed on all that you do and accomplish!

Well my goals are the same, I want to make 2012 the best yet and I do believe Team bombshell will help me accomplish that, I'm already seeing really great results 2 months into this plan! and my weight is staying down through this holiday season! I compete in the spring so keeping that goal the same!

Officially broke 100 pounds today, from 265 at 165 !!

Now for the next several months, will concentrate building muscle, getting ripped!

My friend is going to compete in the fitness competition here in Shreveport in May...I'm gonna go watch her and see what it's all about. Then decide if it is something I might wanna do or not.

Wish I could! But thats the weekend Rebecca competes in her next cheerleading competition!

Got to view my proofs from my photo shoot last night!!! Some of the pics really show the definition I have gained over the last several months....I am so proud of myself!! My photographer edited some of the pics and she said I am the first person she has had to ADD weight to!!! LoL!!! As soon as I get copyright permissions I will post a few!

I made this recipe the other night that I got out of Oxygen magazine and it was a big hit for both my husband AND my 7-year old daughter which is RARE!! LoL! So thought I would share it with you all.

Ginger Salmon in Parchment Paper

Ingredients:
  • 4 cups shredded Napa cabbage
  • 1 red bell pepper, steamed, peeled, seeded and thinly sliced
  • 1 cup snow peas, halved
  • 4 4-oz salmon fillets, skin removed
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp peeled and minced fresh ginger
  • 2 scallions, chopped
  • 1 clove garlic, finely chopped
  • 1 tsp sesame oil
  • 1/4 tsp black pepper
Instructions:
  1. Preheat oven to 400°F.
  2. Cut four large pieces of parchment paper. Fold in half and then unfold and set aside.
  3. Combine cabbage, bell pepper and snow peas in a bowl. Divide them equally on the parchment paper squares.
  4. Place salmon fillets on top of vegetables.
  5. In a small bowl, whisk together soy sauce, ginger, scallions, garlic, sesame oil and black pepper. Drizzle sauce over fish. Fold parchment edges to seal and place each closed package on a large baking sheet. Bake for 20 minutes or until fish flakes easily. Serve.
Nutrients per serving:


Calories: 230, Total Fats: 8 g, Saturated Fat: 2 g, Trans Fat: 0 g, Cholesterol: 60 mg, Sodium: 660 mg, Total Carbohydrates: 10 g, Dietary Fiber: 4 g, Sugars: 5 g, Protein: 27 g, Iron: 1 mg
