Something that may help in the eating is cook in bulk. I usually prepare meals in advance, usually we are all pressed for time and find it easier to pick something up than cook so prepare your own "tv dinners". What I do to keep things simple is get Perdue perfect portion chicken breasts, sprinkle with a little salt free lemon and pepper seasoning, they come five in a package one for each day when at work, get steamer bags for vegetables, only take 2-3 minutes in the microwave, and I use a rice cooker to cook rice in bulk, put one chicken breast, 1 cup vegetables and depending on your cal requirements 1 cup rice in microwaveable containers and freeze. Grab a container and 3-4 minutes in the microwave and you have no thought perfectly balanced meals. Also Bonnie has a recipie posted for turkey chilli, do the same thing cook a batch, throw it in microwaveable containers of the appropriate portion size and again a no thought balanced meal. If you make it easy it's easier to follow a plan.
Here is something I do to up the protein and reduce carbs, mix 1 cup brown rice with one cup lentils when cooking. The lentils are lower in carbs and higher in protein than the brown rice. Gotta get your protein.
