The number of pistons matter when you get to the larger sized pads/rotors and would like an even distribution of pressure for consistent and responsive braking....of course, it would be hard to notice the Brembos if they couldn't see them...even on the Camaro...in regular stoplight-to-stoplight driving.
iirc BMW's M3 STILL uses one piston calipers.

that being said, the only thing a greater number of pistons allows you to do is go with a larger Brake pad, and also a larger rotor. when it comes to performance and track driving the front brakes are doing an absolutely overwhelming amount of the work.

I still use the stock calipers on my car and i track my car very heavily with absolutely no fade. Hell even Ford/ roush use 1 piston calipers on their Grand-Am racing cars.

when it comes to the rears the size of the calipers/rotors are for almost entirely cosmetic reasons. I will be the first to admit that the rear brakes look extremely tacky with the brembos up front. My rears look cartoonishly small with my 6 piston calipers up front.
