You're greatly exaggerating the dangers of using a breather for road course purposes.

Just ordered the Metco breather. Thanks.

Absolutely. Just liked that the MM killed 2 birds in one stone.

MM also offers a road course top that vents through a hose which you can locate wherever

Elite sells a larger can for higher flow applications. It's not a one size fits all equation, anyone with experience in separator design understands this - blowing oily vapor out of a breather with an undersized can is just bypassing the system, which is fine for a track car but again could be cause to deny a warranty claim or fail emissions on a street car. The "x shop runs y can on highly modded cars so it's better for all ZL1 applications" argument doesn't mean anything

It just means that top shops that have the most experience with these vehicles know which catch cans they prefer for good reasons. If they can use any parts that are available and they consistently use one over another its because it provides the results they're looking for without the least amount of hassles. Feel free to disagree, doesn't matter to me. Just stating a fact.

Would adding the Metco breather, with the Elite CC already installed, diminish the effectiveness of the CC?

Would probably make it better, presuming less filtered blowby would be going back into the intake during high flow conditions.

No, the breather has a one way check valve that stays closed until there's enough pressure to open it, which is the purpose of the breather, to release excessive crankcase pressure.
