Classic cars/ trucks for daily driver?

I’m looking for a pickup for misc pickup needs. I’ve found that they’re insanely expensive and am still set in early 201x prices. It seems that 70-80’s trucks can be had for around the $5k mark. The only specific powertrain I know exists is the Ford FE 360 and 390. Does anyone know how dependable these old trucks are (assuming I find a good one)?

I’ve found descriptions like “engine completely gone through,” “top end redone last year,” “runs perfectly,” things like that. Not sure how many “ends” an engine has to consider a complete rebuild, or if a complete rebuild makes the engine like new, or if these old engines were any good even when they were new.

Just looking for general advice to whether I should run from old things. I can replace pretty much anything that doesn’t need a lift or hoist.
