If you don't want AFM, you don't want it. AFM started in the 1500's for the 2007.5 model year (NNBS). But it's not as big of an issue as you think it is by reading online posts of horror stories. The majority of 5.3's and 6.0's with AFM are long-lived and things got even better after about 2010 or so, GM solved a lot of the oil consumption issues.

If you're not worried about the hardware, but just don't like the feel of AFM (it's not 100% seamless), you can get a Range device to deactivate it. Very easy to do, but all the hardware and lifters will still be there.

Some more recent trucks were sold without AFM (now called DFM) and a credit issued on the window sticker during chip manufacturer shortages. Note that all the AFM/DFM "delete" from the manufacturer during this time is just the electronics that control it. They use the same lifters and heads as the AFM/DFM trucks...hardware is there, it's just not utilized.
