Dealership Replacement of Brakes
Guys, 2015 1LE. Going to the dealership for some prevent maintenance. Have 25K miles on it. Last oil change it was suggested to change the brake fluid the next oil change. Don’t drive enough for that not to be like a year from now so I want to do that. Was going to change the pads too. Can dealers provide higher end performance options for fluid and pads and disks if desired?

Dealers typically will give you OEM spec parts, unless you supply them with the parts. From my experience, many will not accept your parts unless the car is out of warranty and the dealer is a performance friendly facility. No harm in asking; They may do it.

I installed the separate clutch fluid reservoir and change the fluid often.
Having them combined (clutch/brake) will make your brake fluid very dirty quickly and your clutch prone to sticking.

Like suggested, call up and ask a service advisor on supplying your own parts. If yes then shop around online and here of course to see what options you have. Unless you're racing, the stock brembo setup is very hard to beat. The only thing maybe would be to change the pads out to something that doesn't dust as much but then you'll give up some performance of course. Just make sure that whatever you supply them is correct and complete for your car.
