Why would you have to cut off the o2 sensor? I would assume you just unscrew it zip tie the wiring harness to the car and then screw the actual gauge sensor into the hole that the o2 sensor came out of.

You can not monitor AFR through a OBD port only with a Wide-band gauge. You can monitor your Long term and short term fuel trims with a OBD connected gauge or bluetooth dongle but they wont be instantaneous like a AFR gauge is. Nor will the be as accurate only give you a rough estimate
