If I can interject here for a moment... substitute the whole can of tomatoes with a can or Rotel Tomatoes and Chili's... emmm emmm good...I also prefer to use Maple Smoked bacon.... gives it an interesting twist...people like it but have a hard time figuring out what is different...

I am a big fan of Rotel Robert but in this case I would first make it out of the book and then see what your taster recommends for round two...
Sum times I make it with stewed tomatoes....when cooking with tomatoes I add just a pinch of sugar....its needed ,especially in sketti sauce ....stewed tomatoes usually has a little sugar in it.....yup, a real good slab bacon is a very critical !
