Ok I'm going to sound like a newb, but what is the difference between the suspension we have a coilovers?

If I can get some for a great price and don't have plans for something else yes. I love my pedders springs but if I can get good performance out of some coilovers along with the freedom to dial in the ride, I'll do it. But for now, 110% satisfied with my springs.

No worries about sounding like a "newb". We were all there once. The difference is that right now, you have either stock rings or aftermarket lowering springs on your stock struts. This is mostly done for lowering the car to give it a better "look". Aftermarket springs also help by lowering the center of gravity of the car and thusly slightly increasing performance.

Coilovers on the other hand are the whole shock and spring assembly which allows for both lowering for looks and increasing performance. Coilovers allow for adjustment to make the springs stiffer to aid in turning or to make the ride softer to make for a more comfortable ride. All in all, aftermarket coilovers allow for dialing in the suspension and that's why they are superior to just aftermarket springs

Does that mean we can lower the car with the ride still being soft?

With coilovers yes, u can get really close to a stock ride. With springs not really. But to be 100% honest, the ride with my pedders springs isn't bad at all. I've taken more than 10 people for rides in my car and none can distinguish from my ride and their stock one.
