Isn't that just old english? Same thing as "wet"? I've seen that before on a "whet stone" for knife sharpening.

Nope, it isn't another, older form of "wet". You are correct to say it means to "sharpen". One may have a "whetstone" to sharpen up knives, AND one might have one's interest "whetted". That means that one's curiosity is piqued.
