We used that at work when we we had just passed by someones office and they were there, but when we went back they were gone...

Rich people would get all the prime cuts of a butchered pig. Steaks, chops ribs... All the cuts on the upper parts of the animal. Poor people would get the low parts of the hog. Snouts, pigs feet, etc. So to do well and have the finer things was said to be sitting high on the hog.
