Smoking 3, one in a cajun spicey brine, one in a full flavor brine and one in a sweet brine. Soaking in the brine for 12 hours, smoking 2 hours uncovered with cherry, then oak, and finish smoking covered. The absolute best melt in you mouth bird there is....gobble gobble!

grease a paper bag and put the bird in and staple shut--best golden brown, moist turkey ever---dont laugh,it works great thought the wife was crazy the first time--

Wink No turkey, but not missin' it.

I know it sounds sissy, hell, I used to see it the same way, but we are vegetarian now, and LOOOVIN' IT!

We're gonna' have a super fine banana squash stuffed with artichokes, mushrooms, tomatoes, deeelicious cheese and other stuff that I ain't privy to since I am not allowed in the kitchen when the women are at work.

Not doing the normal thanks giving thing tomorrow, doing two oven roasted chickens & then doing the whole thanksgiving thing saturday when hubby's best friend can make it.

But our 20lbs is going in the oven, shove herbs & seasonings up the skin with butter & Olive oil & let it bake until golden brown & up to temp. Never had a dry bird
