Roasted root veggies - Sweet potatoes, carrots, parsnips, red beets, and golden beets. We usually roast them a little bit farther to get more color but these were still pretty darn good.

Actually, it is part of a salad recipe we tried one Thanksgiving. The root veggies are piled on top of arugula and topped with a sweet vinegar dressing. Send me a PM with an email address and I will send it to you if you are interested.
