If I preorder at gamestop, will they keep the game until i pick it up, as I paid in full?

It should say on your receipt.... I think it's somewhere around 24-48 hours after launch.

EDIT: I just noticed the paid in full part of your post. They should keep it on hand for you since you paid in full! I would call the store to verify though.
