Yes, in the same gear (say 4th) with a more aggressive final you will accelerate harder (provided the traction is there, which isn't a given with a very powerful car at speeds below 100 mph). But the difference between a 2:41 & a 3.50 is about the same as shifting down 1 gear in the 8 speed. So, 4th vs 4th ... harder acceleration. But a shorter rear gear its not going to be much different in 5th than the original would do in 4th. But you've also spent an extra tenth or two shifting along the way.
