A Raptor and a supercharged street truck are two very different things. Off road trucks will of course sell way better since they're upgraded versions of what trucks are supposed to do in the first place. Even people who aren't in the market for one will look at a Raptor or ZR2 and think, "Well sometimes I have to drive into my brother's backyard and there's that little ditch that I will DEFINITELY need this thing to get through...and plus it looks big and awesome and manly."

A performance street truck though? The vast majority of consumers are going to look at it vs the Camaro or Corvette sitting next to it in the showroom and wonder why they should pay more for a bigger, heavier, less fuel efficient, and most likely slower and poorer handling vehicle. More cargo room I guess?

Not saying there isn't a market for it, it's just not as lucrative as you all think it is. This isn't the 60s and 70s where sticking a big block and supercharger into any random vehicle meant instant success.
