Any older gen car is going to be outgunned by newer models. It's the automotive version of the circle of life. With that being said, a C6 Z06 is my dream car regardless of what newer models can beat it. The looks and performance for the price are unbeatable and with some mods you'll be running a very fast car.
However, are you really willing to just break even on your Camaro? That seems like a loss to me. Yes, there will always be someone with a car faster than yours, but if you've built something that you enjoy then who cares? You need to decide if you want a Camaro or a Corvette. And that answer should steer you towards what you should do.
