In a hot humid environment like that just run 5W30. Probably a good idea to get a 160 thermostat as well. My 160 thermostat lets me run at 185-195F on hot days instead of 220F with the stock thermostat. The factory wants these engine to run at 200+F because it makes emissions better but it sucks for power. I have seen data from Hendrick and done some testing myself on engine temp verses power. The results from both tests where very clear. Over 100F you loose 4hp per 10F increase in temp up to 220F.

You go from 180F to 220F you loose 16hp.
You go from 120F to 200F you loose 32hp.
You want the best ET on the track you run engine cold and rear end warm to hot. Professional Drag Racers shock cool the engine with a high pressure tank down to 45F, launch at 100F and never exceed 160F on run. Of course you will never see an instance where you can or want to use this but I thought I would point out how Pro racers go to extremes to cool the engine for more power. I have seen many times at NASCAR qualifying events where they would shock cool the engine after some hard laps and pick up a full second!
Cooler is better to a point. On stock street engine 160-180 is ok.
