It feels like a roller coaster, but that feeling can become normal to an extent. But that's when you add headers or maybe a cam or supercharger and then it really feels like a roller coaster.
Don't think that you NEED to move to the V8 though. The V6 is a stout package and can certainly move out of its own way. Just customize the car and make it yours. One thing I noticed at least when I wanted to go from an I4 to V6 Honda was that there really wasn't very much difference. Faster yes, but not worth going more in debt. Obviously different cars here but to me I think it would be a similar feeling.
