Oh boy not sure how to address this one.
The original Star Wars from the year
1977. The space ships in the film were actual models built by hand and filmed. There was no CGI crap (I know it's hard to imagine) and "special" effects were special for the time but now are not even sort of special. THAT is why the ships and vehicles looked straight lined and basic, that's all they could reasonably build and put in place. Also that fit the 70's era thinking of what ships would look like.
Now in chronological terms the prequel films were 30 years before but armed with crazy new CGI abilities etc the ships got exotic and wild. Dooku even had a solar sail ship which was fanciful thinking long ago. I find it beyond any possibility that Lucas meant to make the stuff from the originals be more simple than any future prequel. It's like the New Star Trek films. All the stuff they had and the effects were way better so I guess that means they lost technology as time went on in the TV series by this way of thinking.
