I've got Race Deck also. As for mold, I've gone through one Colorado winter and no problem thus far. It isn't really that hard to put the flooring down ( 1 1/2 hr for two car garage first install that including trimming where the center wall is 1 ft into the garage.) If I thought there was the chance of mold, I'd probably just remove half at a time, clean and then re-install.
