I agree that Brembos on the rear look better, but in my experience, they really don't make any significant difference from a braking standpoint. I think if you read the press on the new Mustang, you will see it has an improved suspension and the GT is getting 6 piston Brembos and bigger discs all the way around.

As for tires, I ran a 19x9.5 wheel with a 265/30 tire on the front and 19x11 wheels in the rear mounted with 305/30's on my former Boss and have that same setup on my GT500 with no issues. If Ford chooses to run a narrower tire setup from the factory, I'm sure they have their reasons, but it's not because they can't fit them on the car.
There is actually quite bit of work to package a tire. You can't just plop whatever size you want. You have to include the suspension articulation under a bunch of conditions most folks will never see. Then you have to consider the build variation of the chassis components AND the body. And you have to do this with a grown tire and make sure the CAN NOT touch anything unfriendly that could even remotely damage a tire. Yes you and I can take the liability of putting bigger tires and lowering the suspension. The OEMs can't.
