Test drove a 2LT (I think, whichever LT comes with the V6, anyway, build quality is awesome, the interior is awesome. I moved the seat to where I was comfortable then got out and sat in the back seat directly behind the driver. I still had a lot of room and I'm almost 6 feet tall. If you leave the passenger side where it comes from the factory, you may as well be in a Lincoln town car in the back seat.
The test drive included some twisties and a couple good straights and some hills and dips. It didn't miss a beat. The steering wheel grew on me after a while and the wood is less noticeable the more you drive.
That being said, I would still prefer that they give a dark wood (ebony like the caddies) or simple black plastic or brushed aluminum options. They're going to start offering brushed aluminum and carbon fiber on the caddies they could at least drop the ebony wood option down to the Impala.

I concur on most of your points, but the woodgrain didn't bother us. The Impala will more than likely be her next car barring anything bizzare.
