The thing with skip shift is that the 1-4 pattern was chosen (in part) because it's at least semi natural: as you go down, bump it over then keep going down. With a little practice it can become pretty fluid. A 1-5 shift would be a lot more cumbersome: down half way, over 2, then up. Its still doable, but it would take more effort/concentration/skill than the 1-4 used today.
