Maybe it's just because they enjoy taking a vehicle of their choice, and turning it into something that it isn't. Isn't that the roots of modding, anyway? Pulling fenders off of a coupe to make it a bucket? Building a "funny car" for the track?
Your entire, original hypothesis is completely wrong. Enthusiasts just want to convert whatever they own into something different than what it is. Others just buy for other reasons.
