To be fair, most of the lap times are driven during dry seasons. If you know the location of the Nürburgring, the weather conditions can be very variable (one lap can have sunny weather on one side, and rain on the other).
I think Ford went a bit too late to the Ring to actually set a full flat out lap (I believe it was published after September that they were testing the '13 GT500). Keep in mind that between 15 September and 15 March, winter tyres are obligatory in Germany.
