Some quests are bugged like that. I've had briar hearts in my inventory forever and can't finish the quest for some reason. For what I can tell, if you have the items in your inventory before you start the quest, they are flagged as quest items but the game doesn't count them toward the objective.

In your inventory menu for armor, it should be at the bottom right of the screen.

Hate to burst your bubble there slick, but armor caps out at about 567ish. Anything more is just overkill. And I think I read somewhere that damage and magic resistance caps out at 85%.
