Most new GM cars are offered with automatics with some sort of manual shifting mode. Saturn and Chevy gets steering-wheel mounted paddle shifters.

As far as the transmission fluid, if you start having problems with leaks, slippage, or sticking, try some trans-x. It works really well on high mileage cars. Also, many cars now have "lifetime" transmission fluid that shouldn't need to be changed unless something goes bad. Maybe your car doesn't have that.
