Levelling up just means going aruond killing things and if you don't get far enough, go back to the bonfire, rest and start over. Also, you can get the "soul of a brave warrior" type items to use for souls.

Right now Im stuck on the black knight that is in the tower just past the red dragon.... I think I am just going to leave him alone for now.
