I think some (not all) of our observations of our world could fit this theory, at least a lot better than others. BUT, I think the core concept of the matter expanding enough to double the size of the Earth is hard to believe.
Also, subduction zones are easily seen and measured, its kind of hard to say they don't exist. And your point about mountains is right. The earth's land area should pretty much be smooth if this theory were 100% correct.
Oh, and I'd like this theory to explain how Mt. Everest is growing at 4mm a year.
