What & how much/how often should I eat something before, during & after the event to do it safely but still burn more than I take it?

I would recommend doing something similar to what I do when training for a marathon....eat a bowl of oatmeal at least an hour prior to the event...slow release carbs are a perfect energy source for something like what you are doing versus proteins. Then, like hrpii said, during the exercise fruits (especially oranges) are awesome to help restore your glucose! But if you feel this might be a little messy another option that I love are Power Bar gel blasts (NOT the goo stuff). You can eat a few each time you feel your energy sources getting tapped out. The ones with caffeine in them work the best. Whatever you decide to go with, I would experiment with it first during your 1 hr sessions as some items can upset your stomach or give you cramps during exercise if you don't normally ingest them during your normal course of exercise.
