According to Tire rack, a 2011 Mustang GT has 255/40 19 all the way around. They are slightly wider up front, and a bit narrower in the back. I have always understood that wider tires make the car track worse and bounce around more.
Also, another thing to consider is alignment. The more toe-in you have on the front, the straighter the car will track, but the worse it will turn. So, if the Mustang has a little more toe-in than the camaro, it will track better. I wouldn't be surprised if this is the case, with the Camaro being a bit bigger and heavier, Chevy may very well have given it a slight toe-out to turn better, but making it more "twitchy". I haven't seen the alignment specs for either car.
