Eggs are a great source of complete proteins and other nutrients but when you are trying to eat the proper ratios of protein carbs and fats the additional egg yolkes up the fat calories so normally I eat 1 whole egg with three or 4 whites this way you get the benefits of all that's good but not too much fat. I would rather get my fat calories from a better source such as fish, nuts olive oil etc. Dropping the rice at dinner is a very good idea, you should eat most of your carbs earlier in the day when your body will burn them as energy rather than convert and store them as fat. Another point would be drop the white rice and go with brown. In general the starchy carbs such as rice and potatoes are not a good choice, the exception would be when included in a post workout meal when the higher glycemic index of these foods aid as a delivery system for your proteins.
