You'll know em when you see em. Your screen will tell you when they're in the vicinity and they'll show up as red dots on your mini-map. And I think you do have to be a certain level master hunter. I believe Khan is level 9 and Lobo, Gordo and Grumas (? can't remember the bear's name) are level 10.

I believe you're correct about the level of Master hunter. I just need to knife one more cougar and I can get past this level 5. The rest look easy after that.
