The only one I had trouble finding was Gordo, the boar. It says he's at Twin Creeks and I couldn't find that on the map. Then he just randomly appeared when I was coming out of Thieve's Landing going towards McFarlane's Ranch. Otherwise all the other ones were easy. For Khan just go down to Ojo Del Diablo, walk around awile and he'll show up. Same for the others in their respective places. They do seem to be more easy to find in the daytime though.
