Peak horsepower doesn't come close to telling the whole story. It's the area under the torque curve which provides the acceleration over the rpm range between shifts. The 5.0 Mustang can't match the "area under the curve" of the bigger LS3. Think about it: the Mustang really only has a better power to weight ratio at 6000 rpm and higher.
A lot of new Mustang owners haven't quite latched on to that concept and hence might be in for some disappointment.
