I'm not an expert on the subject, but I think Eskimo is about as politically correct as calling the more southerly first nations populations 'Red Skins'. The most popular meaning for the term 'Eskimo' is 'eater of raw meat'. Now, the legitimacy of this definition is debatable, some say it means something like 'snow shoe wearer'. Regardless, the connotations of that popular definition are decidedly negative (despite the fact they do traditionally eat raw meat). Anyway, it was decided that Inuit ("the people") would be a much more PC term.
