I can tell you, that type of racing has really gained momentum in the last 5-10 years, so it is no wonder buyers of Camaro's and Mustang's are looking for more in that area from those cars. That is why Ford introduced a package that could be ordered for the GT. To satisfy those few (in the overall scheme of things) that actually planned to put their car on a track.
The 2007 GT500 was tuned for comfort vs. tuned for the track, which is easily corrected. I would not say it had 'serious handling issues'. I recall a lightning-lap time of 3:05.9 for the 2007 GT500 in 2008. If that time signifies handling issues, I know a few cars that 'wish' they had handling issues.
