Android is Google's phone operating system. Kinda like Windows for computers. The Droid is basically just a really powerful Android phone. It runs the same software as the other Android phones though, it just has better specs.
There are also some "overlays" to Android like MotoBLUR and HTC Sense that change the look and feel and add some new features.
And, back to the camera bit, it's all in the lens and the quality of the sensor. Even most point and shoot cameras aren't capable of taking advantage of the megapixel they offer. For instance, you can print 20x30s from a high-quality 6 megapixel image, but usually you can only get that kind of quality out of an SLR with a decent lens.
Edit: And there are some other pretty awesome looking devices coming around soon.
