First off, it's not like the panel gaps are horrible and the car looks shoddy. They may not be as tight as some would like, but complaining about it is, IMO, nitpicking.
Secondly, putting together a car made out of plastic is a whole different animal than putting together a metal car. Way harder. That's not so much an excuse as a reason why Corvette tolerances are wider than, say, our Camaros.
Multiple, multiple owners are getting 0-60 times in the 2.8 second range and everybody loves the way it drives. I would gladly live with wider panel gaps on my Camaro if it would do 2.8.
