Maybe flip the breaker to her room and kill the water to her toilet if she has her own bathroom in there. Nurses make good enough money to where they can afford basic living expenses. On a better note, I would draw up a rental agreement first as it seems she doesn't believe she needed to give you the money and may have thought you sprung it on her. Either way, she needs to pay and you can't enable her.
