Truthfully it hasnt been that way since the early 80's. At least they are letting them use some of the body lines that are on the production cars now. Only thing is they are toned down.

It is slightly got some of the character lines, it still has to meet the same aero numbers as the other makes.

Well cup cars have usually been the manufatures coupe versions of family type cars, Ford was the first to use a 4 door body style as a cup car back in the 90's when they used the Taurus.
Chevy used 2 door cars until the Monte Carlo went away and they started using Impalas and then the SS.

They use the Camaro SS and the Mustang GT in the NASCAR Xfinity Series and have for the last couple of years.
